The sweet bit

Why palm jaggery, not sugar.

Palm jaggery is sap, boiled down in open pans until it sets. Nothing is taken out of it, which is why it is dark, slightly smoky, and never tastes the same twice. White sugar is the opposite process — everything is stripped away until only sweetness is left.

We use it because of how it tastes, and because a bite made with it tastes of something.

Palm jaggery

Sap, boiled and set. Unrefined. Dark, smoky, faintly caramel. Colour and taste shift with the season, so no two batches match exactly.

White sugar

Refined to pure sucrose. Identical every time, and tastes of nothing but sweet. Cheaper, and easier to work with. We do not use it.

Our only other sweetener is dates. That is the whole list.

Why do they only keep ten days?

Because we add nothing to make that number bigger. Ten days at room temperature in the sealed pouch, away from moisture, or four weeks refrigerated. We would rather make less, more often.

What is palm jaggery, and why not cane?

Palm jaggery — karupatti — is made from palm sap, tapped by hand and boiled down over a wood fire. It is smokier and more mineral than cane jaggery, less sharply sweet, and several times the price. We think it tastes better.

Can I eat these if I have a nut allergy?

No. Every one of our four recipes contains tree nuts, and all four are made in the same kitchen. If you have a nut allergy, please do not eat them.

Why do two of them contain milk?

We clarify our own ghee from butter, and ghee is in Roasted Amber Bites and Wheat Rochers. Nutty Bites and Fudge Bites contain no dairy ingredients — though they are made in the same kitchen.

What does "freshly made on order" actually mean?

We roll twice a week and hold no stock. Your order is made in the next batch after you place it and sent within 48 hours.
